So I am not into the 1/2 cup of cottage cheese and instead I can have 2 meat servings which would equal 2 ounces of low fat cheese (what I would prefer). Something like cheese strings or what not. But I am not sure we have "low-fat" cheese in Canada. We have cheese that is made with partially skimmed milk. Is that the same? If anyone has any ideas on this, that would be great!

We have all kinds of low fat cheeses. Yes, the skim milk cheese is low fat. Look on cheese packages for words like "light" "reduced fat" or "made from 2% milk"
No Name (loblaws chain brand), Cracker Barrel, etc... have low fat varieties. Most cheese companies do.
The mozarrella string cheese are usually low fat, especially the "Cheesehead" brand which is the lowest fat I've seen.
Laughing cow light wedges also are very good.
